Blue Cheese Salad Dressing

Blue cheese dressing is definitely strong-tasting. Which is why some people love it and some hate it. For us, it makes a nice, occasional change of pace. We like this dressing on a tossed salad, as a side dish for a weekday luncheon meal of tuna on toast.

Ingredients

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 1 tablespoon lemon juice
  • 1 tablespoon parsley, minced
  • a pinch of salt
  • a pinch of freshly ground black pepper
  • 2 oz. crumbled blue cheese

Instructions

  1. In a medium bowl, whisk together mayonnaise, sour cream, buttermilk, and lemon juice until well combined.
  2. Stir in minced parsley, salt, and pepper.
  3. Fold in the crumbled blue cheese.

For a stronger blue cheese flavor, after folding in the crumbled blue cheese, press the crumbled blue cheese pieces against the side of the mixing bowl with the back of a spoon.
