Arroz con Pollo Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 bell pepper, diced
  • 4 bone-in, skin-on chicken thighs
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • pepper to taste
  • Fresh cilantro, for garnish

Method:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened.
  3. Push the vegetables to one side of the pot and add the chicken thighs, skin side down. Cook until the skin is crispy and browned.
  4. Flip the chicken thighs and cook for a few more minutes until browned on the other side.
  5. Add the long-grain rice to the pot and stir to coat it with the oil and flavors.
  6. Pour in the chicken broth and diced tomatoes.
  7. Add the paprika, cumin, and pepper to taste.
  8. Stir everything together and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot with a lid.
  9. Let the Arroz con Pollo simmer for about 20 minutes, or until the rice is cooked and the flavors have melded together.
