Many years ago, I devised this creamy cucumber dressing when I was out of store bought and craving this particular dressing on a tossed salad. I decided to try my hand at making my own, and it was such a success that my family clamors for this tasty salad dressing at the Shabbos table, every single week. It’s so good that my kids asked me for the recipe when they got married. Best of all, though it’s really creamy, it’s also parve, which makes it perfect for a meat meal.
Creamy Cucumber Dressing
A luscious dressing with a refreshing cucumber flavor that's perfect as a topping for your favorite tossed salad.
Equipment
- Microplane
- Food processor
Ingredients
- 1 cucumber, peeled
- 5 heaping tablespoons mayonnaise
- 1 heaping tablespoon Dijon mustard
Instructions
- Using a microplane, finely grate peeled cucumber directly into food processor bowl.
- Add mayonnaise and process until well blended.
- Add mustard, and process until combined, scraping bowl as necessary.
- Taste and check dressing for consistency. If you like the dressing thicker, you can add more mayonnaise. If you like a sharper taste, add more mustard.
