Recipe: Nutty Buddy Chocolate Peanut Butter Bars

Now that Sukkot is over, we can eat chocolate desserts without them melting all over us in the sukkah in the heat of the midday sun. And having just cooked for a crowd seemingly without end for months, we want something easy. These dense and fudgy Nutty Buddy Bars are the perfect solution. They’re so easy you don’t even need to grease the pan.

Chocolate Peanut Buddy Bars

Make them with white or semisweet chocolate chips, or a mix of both

Ingredients:

  • 1 cup peanut butter
  • 6 T. butter or margarine, softened
  • 1 ¼ cups sugar
  • 3 eggs
  • 1 cup all-purpose flour
  • ¼ t. salt
  • 2 cups semisweet or white or a mix of both types of chocolate chips, divided
  • 1 t. vanilla

Method:

  1. Preheat oven to 350°F. In large bowl, beat peanut butter and butter or margarine until smooth, about 1 minute.
  2. Add sugar, eggs, and vanilla extract; beat until creamy.
  3. Blend in flour and salt.
  4. Stir in 1 cup chocolate chips. Spread into ungreased 13”x9” baking pan.
  5. Bake 25-30 minutes, or until edges begin to brown. Immediately, sprinkle remaining chocolate chips over cookie layer. Let stand 5 minutes until chips become shiny and soft. Spread melted chips evenly over top.
  6. Cool completely. Cut into 1 ½ inch bars. Makes 48 bars.
