Mint Chocolate Crack Cookies
Makes 90 cookies
Ingredients:
- 3 cups flour
- 1 ¼ teaspoon baking soda
- 1 ½ teaspoon salt
- 1 ½ cups brown sugar
- ¾ cup margarine
- 2 Tablespoons water
- 2 cups chocolate chips
- 2 eggs
- ¼ teaspoon vanilla extract
- ¼ teaspoon mint extract
Method:
- Sift together the flour, baking soda, and salt
- On moderate heat, in a medium saucepan, cook sugar, margarine, and water, stirring until margarine is melted.
- Remove saucepan from heat, add chocolate chips, stir until melted. Transfer mixture to large mixing bowl. Cool 5 minutes.
- Beat in eggs, one at a time.
- Gradually add flour mixture until just mixed.
- Add mint extract.
- Let dough stand 10 minutes.
- Preheat oven to 350°
- Form heaping teaspoons of dough into balls. Place about 16 balls on each cookie sheet.
- Bake cookies 11-13 minutes. The cookies are ready when they “crack.”
