Mint Chocolate Crack Cookies

Makes 90 cookies

Ingredients:

  • 3 cups flour
  • 1 ¼ teaspoon baking soda
  • 1 ½ teaspoon salt
  • 1 ½ cups brown sugar
  • ¾ cup margarine
  • 2 Tablespoons water
  • 2 cups chocolate chips
  • 2 eggs
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon mint extract

Method:

  1. Sift together the flour, baking soda, and salt
  2. On moderate heat, in a medium saucepan, cook sugar, margarine, and water, stirring until margarine is melted.
  3. Remove saucepan from heat, add chocolate chips, stir until melted. Transfer mixture to large mixing bowl. Cool 5 minutes.
  4. Beat in eggs, one at a time.
  5. Gradually add flour mixture until just mixed.
  6. Add mint extract.
  7. Let dough stand 10 minutes.
  8. Preheat oven to 350°
  9. Form heaping teaspoons of dough into balls. Place about 16 balls on each cookie sheet.
  10. Bake cookies 11-13 minutes. The cookies are ready when they “crack.”
