This coffee cake is a good reminder that pie filling isn’t just for pie. Pie filling, for example cherry or blueberry pie filling, makes a great topping for your Shavuos cheesecake, and is also wonderful in coffee cake. Ingredients:
- 1/4 lb sweet butter or unsalted margarine
- 1 cup sugar
- 2 eggs
- 1/2 cup milk or milk alternative, such as almond, soy, coconut, or oat
- 2 cups flour
- 2 tsp baking powder
- 1 tsp vanilla
- Pinch of salt
- 1 can cherry pie filling
- 1/3 cup flour
- 1/4 cup sugar
- 3 tablespoons butter or margarine
- 1/3 cup chopped nuts (optional)
- 1/2 tsp. cinnamon
Method:
- Cream butter (or margarine) and sugar.
- Add eggs and beat.
- Then add dry ingredients alternately with milk (or alternative).
- Add vanilla.
- Pour half of the batter into greased 9×13 pan.
- Spread pie filling over this.
- Cover with remaining batter.
- Combine remaining ingredients and sprinkle and pat down on top of cake.
- Bake at 350° F for 45 minutes.
- To serve, cut in squares.
