Tuna is a fabulous convenience food which is well loved by even those who normally dislike fish. But we all have our limits on how many times we can eat the same thing. Food boredom is real. So instead of your standard tuna and mayo with maybe a little celery, dill, and lemon juice, try this really different, but still homey rendition. It’s lighter somehow, and just the thing to pique tired palates in summer.
Tuna Salad with Vegetable Sauté
Yield: 6 servings
Ingredients:
- 3 Italian frying peppers*
- 1 small onion
- 3 carrots
- 3-4 tablespoons Olive Oil
- 4 cans water packed tuna, drained and flaked
- 4 tablespoons Mayonnaise
- Salt and pepper to taste
- (pita or buttered baguettes)
*Long, light green or yellow peppers that are sweeter and have thin skins for frying
Method:
- Prepare vegetables: Core and seed peppers, slice, slice onion peel and grate carrots
- Sauté vegetables in olive oil until soft, cool
- Mix vegetables into tuna, add mayonnaise and salt and pepper to taste
- Serve in pita or on buttered baguettes
