Summer Means Grilled Lemon Garlic Chicken

The school year is drawing to a close and summer is almost here. Now when the thermometer goes way up and the weather is sizzling hot, I make lemon garlic chicken. The bright flavors perk up tired appetites otherwise dimmed by heat. Also, there’s no basting or last minute work. Once you have the chicken in the marinade, it’s ready to go. Everyone likes this chicken! Except vegetarians, of course.

Grilled Lemon Garlic Chicken

Ingredients:

  • Broiler fryers, cut up, any amount
  • Juice of half a lemon per piece of chicken
  • 1 clove minced garlic per piece of chicken
  • Freshly ground black pepper, to taste
  • Minced herbs, fresh or dried, to taste (I like thyme, tarragon, or parsley)
  • Olive oil

Method:

  1. Rub chicken with a healthy glug of olive oil, the minced garlic, herbs and black pepper (about 3 grinds per piece of chicken). Add lemon juice. Marinate 1-4 hours.
  2. Grill in oven under broiler on low, not too close to broiler element, 10 minutes on underside, then 7 minutes, top side up, or until done.
  3. Serve hot or cold!
