Looking for a new, parve side for Shabbos? Trying to find a way to get your family to eat more green vegetables? This kugel is for you, Dear Reader, raising boring old zucchini to fabulous new heights. Bonus? It’s easy to prepare, especially if you use a food processor for slicing the zucchini.
Zucchini Kugel
Yield: 24 servings
Ingredients:
- 6 medium zucchini peeled, quartered & sliced (the pieces will look like triangles)
- 1 medium onion, chopped
- 1 cup flour
- ½ teaspoon baking powder
- 2 tablespoons onion soup mix
- 4 eggs
- ½ cup oil
- Salt and pepper to taste
Method:
- Preheat oven to 350° F.
- Mix all ingredients.
- Bake, uncovered, in a greased 9”x13” pan for 1 ½ hours or until set and golden brown.
Note: Freezes well.
