So okay, we’re not really saying that eating cookies is good for your heart. But a new study tells us that green tea can prevent artherosclerosis which can lead to heart attacks and strokes. And cookies are one way to incorporate more green tea into your diet, right?
Well, that’s my story and I’m sticking to it. Besides, these cookies are delish. Try them, you’ll like them. And so will everyone else!
Green Tea Butter Cookies
Yield: 7 dozen cookies
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons finely ground loose green tea leaves or use 8 teabags
- 1 tablespoon matcha powder
- 1/2 teaspoon salt
- 2 sticks (1 cup) unsalted butter, softened
- 1/2 cup plus 2 tablespoons confectioners’ sugar
Method:
- Whisk together flour, tea, matcha powder, and salt in a small bowl.
- Cream together butter and sugar until pale and fluffy, about 3 minutes.
- Gradually mix in flour mixture until just combined.
- Divide dough in half. Transfer each half to a piece of parchment paper; shape into logs 1 1/4 inches in diameter. Roll each log in parchment, pressing a ruler along edge of parchment paper after each turn to narrow the log and force out air. Freeze the logs 1 hour.
- Preheat oven to 350 degrees. Unwrap frozen logs and slice dough into 1/4-inch-thick rounds. Place cookies one inch apart on parchment-lined baking sheets. Bake until edges turn golden, 13 to 15 minutes. Let cool on baking sheets on wire racks.
