“Dirty” or “trashed” wings are the newest food craze to hit kitchens everywhere. The wings are coasted in buffalo sauce, then double deep-fried for a flavorful and crispy exterior. For this trendy but messy finger food, you need only a few, simple ingredients, chicken wings, hot sauce, oil, salt and pepper. It’s hard to believe you can make something so delicious with just a handful of ingredients. Watch the family wolf down these wings during the next Superbowl!
Kosher “Dirty” “Trashed” Buffalo Wings
Ingredients:
- Vegetable oil for frying
- 4 pounds chicken wings, separated into drums and flats
- 1 1/2 cups hot sauce
- Salt and freshly ground pepper to taste
Method:
- In a large pot or deep fryer, heat vegetable oil to 375°F.
- Flash fry the chicken wings in batches for 10 seconds and remove to a paper towel-lined cooling rack.
- In a large bowl, toss fried wings with hot sauce until well coated. Season wings with salt and pepper to taste.
- Working in batches, place the wings back into the oil and fry for 7-8 minutes until cooked through.
- Drain the wings on freshly paper towel-lined cooling racks and serve with celery sticks and tofu dressing (recipe follows) on the side.
Tofu “Blue Cheese” Dressing (Parve)
Ingredients:
- 16 oz. silken tofu
- 1 garlic clove, peeled
- 2 tablespoons apple cider vinegar
- 1 tablespoon miso paste
- ¼ cup brewer’s yeast
- 1 teaspoon onion powder
- ½ teaspoon fresh dill, minced
Method:
- In a blender or food processor, combine silken tofu, garlic clove, apple cider vinegar, miso paste, brewer’s yeast, onion powder, and fresh dill.
- Blend until smooth and creamy, scraping down the sides as needed.
- Transfer the dressing to a bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve the tofu “blue cheese” dressing alongside the kosher “dirty” or “trashed” buffalo wings with celery sticks for dipping. Enjoy the delicious and flavorful combination of the hot wings, with cool creamy dressing and crisp celery sticks on the side!
