Easy Energy Bars

These easy energy bars need only five ingredients to befabulous. They not only taste great, but are deliciously healthy, too.

Ingredients
  

  • 1 cup almonds pulsed a few times in a food processor until roughly chopped
  • 1 1/2 cups quick-cooking oats
  • 1/2 cup maple syrup
  • 1 cup almond, soy nut, or sunflower seed butter
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon salt
  • 1 cup dried fruit such as cranberries, cherries, or raisins

Instructions
 

  • Combine almonds, oats, and dried fruit in a medium-sized bowl. Heat the maple syrup, coconut oil and almond or other vegan butter in a small saucepan over low heat and stir until mixed. Pour the resulting mixture into the bowl of dry ingredients and stir to combine.
  • Transfer mixture to an 8×8-inch baking dish and flatten with your lightly oiled palm or offset spatula. Cover with plastic wrap and place in the refrigerator for 2-3 hours or overnight.
  • Cut into bars and store in an airtight container in the refrigerator or freezer.

Notes

Energy bars keep for up to five days refrigerated. Frozen energy bars need only 10 minutes at room temperature to be soft enough to eat.
Can be crumbled for use as granola
