Homey Applesauce Cake

Our go-to dessert when we want something easy and homey is this simple applesauce cake with its moist and tender crumb. After many years of experimentation, we decided to leave the raisins out and substitute cornstarch for some of the flour to lighten the texture. The result is a cake that practically melts in one’s mouth! Make sure you sprinkle the tops of the cakes of the powdered sugar and cinnamon topping while hot, when fresh out of the oven, and use a heavy hand, for a delightful finish.

Applesauce Cake

Yield: 3 loaf cakes

Ingredients:

  • 1 cup margarine
  • 1 ½ cups sugar
  • 2 eggs
  • 2 cups unsweetened applesauce
  • 3 ½ cups flour
  • ½ cup cornstarch
  • 1 teaspoon baking soda
  • 2 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt

Topping:

  • 1 cup powdered sugar, mixed with
  • 1 teaspoon cinnamon

Method:

  1. Preheat oven to 350° F.
  2. Line 3 loaf pans with baking parchment paper. Set aside.
  3. Sift together dry ingredients, set aside.
  4. Cream margarine with sugar in large bowl.
  5. Beat eggs and add to mixture.
  6. Beat in applesauce, scraping bowl to ensure batter is evenly mixed.
  7. Add dry ingredients, beating until just mixed.
  8. Pour batter into loaf pans.
  9. Bake cakes for around 35 minutes. Tops will be pale when cake is done. Test with toothpick, crumb should not be bone dry.
  10. Sprinkle cakes heavily, while still hot, with mixture of powdered sugar and cinnamon.
  11. Freezes well.
